Mediterranean Turkey Burger

No need to catch a flight to embrace the flavors of the Mediterranean region. Whip them up right in your backyard with this zesty turkey burger recipe that will transport your taste buds abroad with each bite!

Ingredients

  • 1 ½ lbs ground turkey
  • 2 cloves garlic, minced
  • ½ medium red onion, finely chopped
  • 1 c fresh spinach, chopped fine
  • 1/4 c feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried parsley
  • 1 tsp sea salt
  • ½ tsp fresh ground black pepper
  • 2 pitas, cut in half to form pockets
  • 2 c arugula
  • ½ c pickled red onions
  • 4 tbsp tzatziki sauce

Directions

  1. Line a baking sheet with parchment or wax paper and set aside.
  2. In a large bowl, add the ground turkey, garlic, onion, spinach, feta, olive oil, oregano, dill, salt and pepper. Mix just until everything comes together. Make sure not to overmix!
  3. Using your hands, form the mixture into four equal portions and shape them into 1” thick patties. Transfer them to the lined baking sheet and chill for at least 30 minutes. This can be done up to a day in advance.
  4. Preheat your grill on medium high heat.
  5. Once the grill has reached temperature (around 450°F), it’s time to oil the grates. This prevents the burgers from sticking and helps facilitate those classic grill marks! Using grilling tongs, rub the grates with a wad of paper towels dipped in canola oil, making sure to coat the grates well. Give the grill 5-10 minutes to get back up to temperature after oiling.
  6. With a metal spatula, transfer the chilled patties on to the grill. Cook for about 5-6 minutes then flip and cook for another 5-6 minutes, until the burgers are slightly charred and golden. An instant read thermometer will reach 165°F when the burgers are done.
  7. Once they are done, transfer patties to a serving platter.
  8. Serve in a pita with arugula, pickled red onions and tzatziki. You can customize this burger to your liking with additional toppings such as hummus, feta, black olives and tahini.
